Recipe Title: Spinach Tabbouleh Salad

Ingredients:

3/4 cup quick cooking couscous
1 cup water
1 package (6 oz) DOLE Baby SPinach Blends (any variety)
1-1/2 cups diced tomatoes
1 cup diced yellow summer squash
1 cup diced red onion
2 Tbsp minced fresh mint
1/3 cup bottled vinaigrette or olive oil and vinegar dressing
 
Preparation:
Prepare couscous with water according to package directions. Fluff with fork.Toss together salad blend, couscous, tomatoes, squash, onion, and mint.Pour dressing over salad; toss to coat. If not serving immediately, cover and chill up to several hours.Variation: For a main dish that serves 3 to 4, add 1 cup crumbled Feta cheese and/or 2 cups grilled chicken strips to this salad.
