Prepare couscous with water according to package directions. Fluff with fork.Toss together salad blend, couscous, tomatoes, squash, onion, and mint.Pour dressing over salad; toss to coat. If not serving immediately, cover and chill up to several hours.Variation: For a main dish that serves 3 to 4, add 1 cup crumbled Feta cheese and/or 2 cups grilled chicken strips to this salad.
